Gabriella is back, the chef behind Little Sambol, for a 4 course Sri Lankan feast at Veraison Wines.
Expect big flavours of Sri Lanka in every mouthful. Gabriella will be cooking a mix of regional dishes and her own interpretation of her favourite Sri Lankan plates.
The team at Veraison have put together a gorgeous wine pairing for each course which can be purchased on the night.
A festive snack, my version is topped with tempered turmeric potatoes, coriander+mint coconut sambol, mango+saffron yoghurt, chilli tamarind sauce and fried gram flour noodles. (v)
Deep fried ‘short eat’, all the flavours of Sri Lanka rolled up into bite size balls. Served with pickles, mango raita and my fiery Little Sambol hot sauce.
Lamb with String Hoppers
Marinated overnight and slow cooked lamb leg curry, string hoppers (a delicate rice flour noodle), served with a pol sambol, seeni sambol and a beetroot raita.
Veg option: Tamarind Aubergine Pirattal
Spiced caramel burnt cheesecake, Ceylon Arrack cream, salted candied cashews, toasted coconut (v)
