Bio
I am a self-taught cook who is passionate about food. I am on a mission to promote Philippine cuisine one dish at a time either through our supper clubs or our bottled products. Philippine cuisine is simple food with complex flavours. It is a combination of Malay, Chinese, Spanish, Mexican and indigenous flavours, creating a delicate balance between salty, sour, sweet and bitter tastes. The blend gives you that umami taste, known as ‘linamnam’ in our language. In 2016, I won the Best "Alternative Christmas Dish" on Kristie Allsopp's Handmade Christmas as judged by Chef Jimmy Lee, where I served Chicken Relleno, Adobo Sauce, Roast Potatoes and Chargrilled Little Gem Lettuce topped with Parmesan. He dubbed my dish "morish". Following this win, I launched our sauces where we earned a star in this year’s Great Taste Awards for our Black Bean Chilli Oil. Travel and food are two of my favourite things in the world. The food I cook today is a result of this. I look forward to welcoming you to one of our events and experience not only our food but also the famous Filipino hospitality.

"Kamayan" Feast

What an amazing experience, we had never eaten Kamayan style before, the food was laden out in front of us on banana leaves all fresh, tasty, colourful and utterly delishicous. The welcome drink was a lovely touch and it was a real treat being able to eat outside. All the hosts made us feel very welcome, at home and spent time explaining all the dishes, their origin, method of cooking, ingredients and family stories about shared meals, all in all a truly wonderful night.
