Chicken puttanesca - I have long been a fan of the Italian puttanesca sauce, this lovely gutsy sauce is supremely good with chicken that's been sautéed first then gently simmered in the sauce to absorb all the flavours. A simple Italian recipe that's brimming with olives, tomatoes, garlic, onions, basil and all things sunshine.
Roasted Salmon with lemon and turmeric - always goes down a treat at dinner and is a fabulous Iranian dish. The salmon is marinated then slow roasted in the oven which makes is tender, flakes away with a fork and is divine.
Stuffed aubergine - the secret ingredients that make this dish sing is the rice stuffing. Aged basmati is friend with onions and garlic then 11 different spices are added to the pan and when everything turns golden it's then stuffed into aubergines and popped into the oven (vegan and vegetarian friendly I'll make a few extras because when this one come out of the oven it's a real treat!)
