I should have been flying of to Morocco this week but instead have to console myself with a glass of mint tea and my favourite Arabesque cookbook. Come with me on an aromatic, intoxicating explosive culinary journey.
This is definitely easy to adapt to dietary requirements so let me know what works best for you and I will amend/substitute the bits in the box accordingly.

Labneh - a Middle Eastern homemade soft cheese served with olives and pomegranate seeds.
Moroccan carrot and beetroot salad - a dash of orange blossom water and a pinch of cinnamon.
Zaalouk - mashed aubergine and tomato salad - a bit like babagnoush but better, much better.
Tabbouleh with preserved lemons and herbs - This Levantine salad is served widely through the Middle East, packed full of flavour these simple ingredients carefully put together make this dish sing (I make mine with couscous).
Sweet potato salad - Sweet potatoes are very popular in Morocco this dish has added preserved lemons.
Herb fritters - these are traditionally served as a street food snack and really pack a taste slap in the chops.
Cacik - a cucumber and yoghurt salad.
Raosted pepper stuffed with chickpeas and soft fresh goats cheese.
Skewer of saffron, turmeric and onion infused chicken.
