I don’t know about you but I really need cheering up, so today, just for a few minutes we are going to sit on a sun kissed beach in Greece …… If you don't want it for your tea you can always have it for your lunch tomorrow and be the envy of all around you!

Marinated barrel aged Feta – You can’t beat a bit of feta to bring back holiday memories. This icon of Greece has been marinating in rosemary, lemon, oregano, chili and olive oil.
Tapenade – Another Greek ingredient, Kalamata olives blitzed to a pulp with lemon, garlic, capers, basil and more olive oil.
Skewer of souvlaki chicken - moist, tender and infused with lemon and oregano.
Homemade hummus – silky, creamy with extra tahini you’ll definitely be able to taste the difference to shop bought!
Greek potato salad - not a drop of mayonnaise or salad cream in sight.
Homemade Tzatziki - yogurt at it's best.
Pilafi Pourgouri - roasted bulgar wheat salad.
Wilted herb, garlic and rice salad – rocket, coriander and spinach is pan fried with slivers of garlic and sea salt added to long grain basmati rice.
Roasted vegetable salad with sunflower seeds.
Melitzanosalata - aubergine dip (I have a secret mission to get people to eat more aubergine).
Lemon butter orzo pasta salad.
Stuffed vine leaves.
