One of the cuisines I miss the most from back home is Mexican! The ingredients used in Mexican cooking are lots of chillies, tomatoes, peppers, avocados, beans and corn. Tonight we're going to recreate some dishes and spread the love.
Please bring your own alcohol and/or any other drinks you fancy! Water will be provided on the table.
We're starting the night out right with some tortilla chips and dips...
Guacamole - lots of avocado lovin' here with garlic, lime, and chili.
Pico De Gallo - a fresh salsa with tomato, onion, garlic, spices and lime.
Chorizo Enchiladas - Despite the name, these don't have chorizo in them at all! A mixture of minced pork and beef with spices and red chili sauce, all wrapped up in a tortilla and baked with cheese on top.
Fajitas De Chiles - Vegetable fajitas with onions, peppers, mushrooms and chillies. Wrap it in a tortilla any way you like!
Flan (Mexican Caramel Custard) - a gorgeous baked vanilla custard with caramelized sugar on the bottom.
